Pacific Harvest Kombu Leaves are harvested from Atlantic kombu (Laminaria digitata), a brown seaweed highly regarded in Japanese and Korean cooking. Kombu is prized for its natural glutamates which create a rich, savoury dashi stock — the foundation of miso soup, ramen and many Japanese dishes. It is also high in iodine, calcium and iron. Add to bean dishes during cooking to improve digestibility, or steep in water to make dashi stock. These whole leaves offer authentic flavour and maximum flexibility in the kitchen.
